March-April

  • Lumpfish roe with winter cabbage & rye bread
  • Salt baked beets with paradise apples & ricotta
  • Baked Jerusalem artichoke with parsley & Blå Kornblomst-cheese
  • Beef from Mineslund roasted medium-rare or slow roasted pork loin from Hindsholm, with
    – creamy pearled spelt with Havgus-cheese
    – roasted potatoes tossed with pickled onions & herbs
  • Manfreds’ chocolate mousse with olive oil & cocoa shells

May-June 

  • Trout tartare with white asparagus & rye bread
  • Green asparagus with anchovy emulsion & salted egg yokes
  • Chard with crispy buckwheat seeds & jersey ricotta from Abbets Have
  • Beef from Mineslund roasted medium-rare or slow roasted pork loin from Hindsholm, with
    – creamy pearled spelt with Havgus-cheese
    – new potatoes tossed with butter & herbs
  • Panna cotta made from jersey raw milk with elderflower

July-August-September

  • Trout tartare with kohlrabi & green strawberries
  • Boiled summer leeks with crispy buckwheat seeds & jersey ricotta from Abbets Have
  • Grilled sweet corn with marjoram & smoked salt
  • Beef from Mineslund roasted medium-rare or slow roasted pork loin from Hindsholm, with
    – creamy pearled spelt with Havgus-cheese
    – new potatoes tossed with butter & herbs
  • Panna cotta made from jersey raw milk with elderflower & strawberries

October-November

  • Salted cod with kale & smoked kelp oil
  • Salt baked celeriac with black olives & browned butter
  • Tough Jerusalem artichokes with raw mushrooms & fermented mushroom emulsion
  • Beef from Mineslund roasted medium-rare or slow roasted pork loin from Hindsholm, with
    – creamy pearled spelt with Havgus-cheese
    – new potatoes tossed with butter & herbs
  • Manfreds’ chocolate mousse with olive oil & cocoa shells
